Chicken Fajitas
1 tbsp cooking oil
500 g chicken breast fillet
1 onion
1 yellow pepper
1 red pepper
1 green pepper
1 sachet Santa Maria Medium Fajita Seasoning Mix
8 Santa Maria Plain Flour Soft Tortillas
salad leaf
100 g grated cheddar cheese
Guacamole
1 avocado
plum tomato
1 red onion
1 pot coriander
1 lime
0.5 tsp salt
Nachos
1 packet tortilla chips
100 g grated cheddar cheese
1 red chilli
1 green chilli
Salsa
100 g chopped tomatoes
1 red onion
1 pot coriander
1 green chilli
0.5 tsp salt
1 lime

How to prepare

Chicken Fajitas

 

  1. Combine thinly sliced chicken breast, onions and mixed peppers with a pack of Fajita Seasoning Mix (Mild or Medium). 
  2. Heat oil in a pan and add the above and fry.
  3. Heat the Tortillas and top with chicken, salad leaves, guacamole, salsa and cheese.

 

Guacamole

 

  1. Combine mashed avocado, diced plum tomatoes, diced red onions, coriander leaves, pepper powder, salt and lime juice to make guacamole.

 

Nachos

 

  1. Add Tortilla Chips as a base for the Nachos and top with grated cheddar cheese and pop in the microwave for a minute to melt the cheese.
  2. Top with tomato and onion salsa and chillies.

 

Salsa

 

  1. Combine finely chopped tomatoes, red onions, coriander leaves, green chillies, salt and lime juice and serve fresh.
