Mango and Cucumber Salsa

There are hundreds of recipes for different salsas. Here is one of our favourites. Sweet, sharp and crunchy, this makes a wonderful accompaniment to all sorts of grilled fish and meat, cheese and salads, as well as classic Mexican foods.

1 Large mango, peeled and chopped |
1 Red onion, finely chopped |
1 Small bunch of coriander, chopped |
2 Limes, zest and juice |
2 cm Fresh ginger peeled and finely chopped |
0.25 Cucumber, finely chopped |
How to prepare
Mix together all ingredients and season to taste.
Serve chilled.
Garnish with red or green jalapeños (finely chopped) to taste.
Chef's Tip:
This salsa is fantastic as a dip or as a side dish with shellfish or fish.
